Healthy Recipes

I have found some great recipes over time that taste great and are very healthy. Some are my own and others I have found online. I will provide a link to those. Each month, different recipes will be posted that I have tried and others from contributors.

SEVEN LAYER SALAD - I found this recipe on Allrecipes.com and I love it! It's healthy (and pretty) and it is perfect to eat on for several days. I will usually prepare fish or chicken with this salad but it is also filling enough as an entree.

INGREDIENTS
1 pound turkey bacon
1 package green leaf lettuce - rinsed, dried, and chopped
1 red onion, chopped
1 (10 ounce) package frozen green peas, thawed
10 ounces shredded Cheddar cheese
1 cup chopped cauliflower (or broccoli)
1 1/4 cups mayonnaise (can mix with Ranch for added flavor)
2/3 cup grated Parmesan cheese

DIRECTIONS
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
In a large flat bowl, place the chopped lettuce and top with a layer of onion, peas, shredded cheese, cauliflower and bacon.
Prepare the dressing by whisking together the mayonnaise and Ranch dressing and Parmesan cheese. Spoon over salad and refrigerate until chilled.


Spaghetti Sauce from "World's Best Lasagna" - This is a another great recipe that I found on AllRecipes.com and it tastes great! I took the sauce from this lasagna recipe and made it for spaghetti. If you are concerned about pasta, there are gluten-free, low carb, and whole wheat pastas that are healthier options.

* 1 pound sweet Italian sausage
* 3/4 pound lean ground beef or ground turkey meat
* 1/2 cup minced onion
* 2 cloves garlic, crushed
* 1 (28 ounce) can crushed tomatoes
* 2 (6 ounce) cans tomato paste

Dreamfields Pasta - LOW CARB

If you are watching your carbohydrate intake and are feeling deprived because you have had to cut back on pasta, fret no more! Dreamfields Pasta is a great tasting, low-carb pasta sold at most major grocery store chains - including Kroger. The taste is the same as traditional pasta and you can enjoy spaghetti, lasagna, macaroni and cheese and all of your favorite pasta dishes without the guilt!

I have eaten Dreamfields for over three years and I never worry about weight gain. I do consume sensible portions. One caveat: Dreamfields definitely has more fiber so try to drink plenty of water after having this pasta.

Dreamfields has per serving (2 ounces dry, about 5 ounces cooked):

Healthy Recipes

* 2 (6.5 ounce) cans canned tomato sauce
* 3 tablespoons white sugar
* 1 1/2 teaspoons dried basil leaves
* 1/2 teaspoon fennel seeds
* 1 teaspoon Italian seasoning
* 1/2 tablespoon salt
* 1/4 teaspoon ground black pepper
* 4 tablespoons chopped fresh parsley

In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned.
Stir in crushed tomatoes, tomato paste, tomato sauce, and water.
Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley.
Simmer, covered, for about 1 1/2 hours, stirring occasionally.


Chicken and Broccoli Casserole - This is a wonderful comfort food recipe. It's easy to prepare and has a lot of flavor.

5 to 6 chicken breasts or chicken thighs
1 to 2 pkgs. frozen broccoli
1 cup rice (Basmati is a healthier choice than white rice)
1 can cream of chicken soup
1 tbsp. lemon juice
1 can cream of mushroom soup
1/4 c. mayonnaise
1/3 c. butter
6 oz. grated cheese (any type)
Bread crumbs to cover top of casserole
Cook chicken until tender. Cool - take meat from bone and cube. Cook broccoli until done - heat together soups - lemon juice, mayonnaise and butter. Layer the chicken, broccoli and soup mixture in buttered casserole dish. Top with grated cheese and bread crumbs. Bake at 350 degrees for 30 minutes.

The NU Wave or FlavorWave Ovens

You may have seen the infomercial for these mini convection ovens and wondered if they work. They do! If you are trying to eat healthier, I recommend the Nu Wave or the TurboWave Oven.

You can prepare an entire meal in under 30 minutes - including frozen meats. Just add a little seasoning, set the temperature and timing, and watch your food cook. Not only is it quick but your food is full of flavor and not dried out. The ovens are not very costly and worth every cent!
